 400 g of grass-fed beef liver
 1 large onion (about 150 grams), thinly sliced
 2 cloves garlic, minced
 2 tbsp olive oil
 1 tsp dried thyme
 1 tsp dried oregano
 1 tsp paprika
 Salt and pepper to taste
 2 tbsp lemon juice
 Fresh parsley, chopped (for garnish)

Directions

Preparation:

-Rinse the beef liver under cold water and pat it dry with paper towels.
-Slice the liver into thin strips, about 1 cm thick.
-In a bowl, mix the sliced liver with lemon juice, salt, pepper, dried thyme, dried oregano, and paprika. Let it marinate for about 15 minutes.

Cooking:

-Heat the olive oil in a large skillet over medium heat.
-Add the sliced onions to the skillet and sauté until they become soft and translucent, about 5-7 minutes.
-Add the minced garlic and sauté for another 1-2 minutes until fragrant.
-Push the onions and garlic to the side of the skillet and add the marinated liver slices in a single layer.
-Cook the liver for about 3-4 minutes on each side until browned but still slightly pink in the center. Do not overcook, as the liver can become tough.
-Once the liver is cooked, mix it with the onions and garlic in the skillet. Sauté everything together for another minute.
-Remove the skillet from the heat and sprinkle with freshly chopped parsley.
