 24 tbsp water (as needed)
 0.50 tsp salt

Directions

Combine Ingredients: Using a fork or your hands, gradually incorporate the flour into the eggs until a dough begins to form. If the dough seems too dry, add water, one tablespoon at a time, until the dough comes together.

Knead Dough: Turn the dough out onto a lightly floured surface and knead for about 5-10 minutes, or until the dough is smooth and elastic.

Rest Dough: Wrap the dough in plastic wrap and let it rest at room temperature for at least 30 minutes to allow the gluten-free flour to hydrate and the dough to relax.

Roll Out Dough: After resting, unwrap the dough and divide it into smaller portions. Roll out each portion into a thin sheet using a rolling pin or pasta machine.
